How to Make Mint Chutney?

Mint is very good for Health. It is beleived to cure the intestinal disorders. Mint is used in lot of ways in the Indian Cusine.
It is used in makeing curries, used in making smoothies and also used in making Hot chutney's
Today I will write How to make such hot chutney with Mint Leaves.

Ingradients:
Mint Leaves -- Around 1/2 lb
Tamarind -- 10 gms
Dry Chilli --- 20 gms
Salt to taste
Oil -- 1 tsp
Garlic -- 2 to 3 cloves
Geera -- 1tsp

Method:

Take a pan, heat it and add oil.
To this add dry chillies, saute them for about 2-3 minutes.Put a lid on the pan.
To this, add mint leaves and saute them for about 10 minutes.
To the blender, add geera, garlic,salt and the mixture in the pan, grind it until soft.
Enjoy it with Rice.

This is very good for the kids.

Brinjal and Tomato curry

1 small Brinjal cut into pieces
3 Big plumpy tomatoes                                                                                                
1 large onion, chopped                                                                                                   
3-4 green chillies chopped
1/2 tsp cumin seeds
½ tsp Mustard seeds
1 tsp turmeric powder
2-3 tsp chili powder or according to your taste
5-6 Tbs oil
Salt to taste

Method:
In a pan or pot, heat the oil on medium heat. Add the cumin seeds , mustard seeds. Let them fry for about a minute( you can stop when you hear the splatter of mustard seeds),and chopped onion and green chillies. Fry it for 3 minutes or until golden brown. Once the onion is golden brown, add the tomato,just add ¼ tsp of salt and keep the lid on the pan. After 5-7 minutes, the tomatoes gets soft and mashed up.Then add Brinjal to the pan. To this add turmeric powder and chili powder and cook it for another 10-15 minutes
